Changing Cover Photo in Albums in Photos

Hello...

My very post in the apple community.

New convert to apple, and my first purchase is an iPhone 7. Loving the camera and what it can do with photos.

How do I change the cover picture of an album I have created...?

I have read a lot online, but all has not worked, hence my first stop here.
